It does not absorb much water, is not very soluble, and is therefore most suitable for dry products, in dairy desserts, bars, and extruded products. Due to its low caloric intake and high content of insoluble fiber with a high percentage of cellulose, it is popular in diet products and products that give a greater sense of satiety, while promoting, like all fiber, the proper functioning of intestinal bacterial flora. It increases the nutritional value and fiber content of any dish by reducing fat and calories, without varying the flavor. Substituting it partially for regular flour decreases carbohydrates to the dough.

ICE CREAM: The use of Food Grade Bamboo Fiber, used in low amounts, makes it possible to create ice cream that is homogeneous, stable to thermal shock, and creamy. In sorbets it is used to bring in more solids, such as in a lemon sorbet, to increase the texture and creaminess. It needs a very low dosage (recommend within 5gr) to absorb a larger proportion of liquids.
COOKING: Bamboo fiber is considered a functional ingredient with structuring action.
