Sorbitol is a sweetener for low-calorie products. It is in white hygroscopic crystalline powder form, odorless and with a fresh, sweet taste. Very soluble in water. It is present in red algae and in many berries and fruits such as apples, pears, plums, cherries, and sorbs from which it takes its name.

TECHNICAL CHARACTERISTICS: Sorbitol is a six-carbon atom alcohol belonging to the category of polyols, thus functionally assimilable to common carbohydrates. Sorbitol finds wide use in food as an acariogenic and low-calorie sweetener.
Its sweetening power is in fact 60 percent that of sugar, but for the same weight it provides 40 percent fewer calories (2.6 Kcal/g versus 4 of sucrose). The taste is fresh and pleasant, but even more important is sorbitol's ability to give texture to the product, retaining moisture and improving its preservation (it inhibits the development of yeast, mold and other microorganisms).
BAKERY: Sorbitol is a very useful ingredient for keeping pastries and leavened products soft for longer.
OTHER: Sorbitol is also a common ingredient in toothpastes, mouthwashes and some cosmetics, to which it imparts a soft, pasty appearance. As an excipient, it also finds a place in the pharmaceutical industry for the aforementioned hygroscopic and sweetening properties.
